Beets are one of the healthiest vegetables on the planet. Beetroots are rich in antioxidants that fight free radicals and reduce oxidative stress from the body. They benefit the body by reducing inflammation and detoxifying the body. This creamy and colorful salad is a delicious Greek dip——very appetizing and refreshing! The garlic and vinegar, along with the fresh herbs give a stronger flavor by ‘marinating’ the beets!
INGREDIENTS:

250 grams or 2 medium-sized boiled chopped beetroots

2 tablespoons greek yogurt

1/2 onion finely chopped

1 tablespoon apple cider vinegar

1 garlic clove minced

a handful of fresh parsley chopped

a handful of dill chopped

salt & pepper
METHOD:

Add all of the ingredients into a bowl and mix well

Refrigerate salad for 2 hours before serving

Garnish with fresh parsley sprigs and serve
